Over a span of six months, the restaurant conscientiously collected more than 800 kilograms of shells, primarily from oysters and other shellfish, which served as the raw material for this ambitious undertaking. Studio founder David Pompa articulated the inherent logic behind this selection, noting the vast quantities of waste generated by seafood consumption. His vision was to fuse the essence of Contramar's culinary world with Davidpompa's design ethos, breathing new life into what would otherwise be discarded.
